BEET & GOAT CHEESE SALAD

Ingredients

Salad:

  • 1 cup Pickled Pink Honey Cinnamon Beets
  • 1 package mixed greens
  • 1/2 cup goat cheese
  • 1/4 cup pignoli nuts (or nuts of your choice)

Lemon-Honey Vinaigrette:

  • 1 cup olive oil
  • 1/2 cup lemon juice
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lemon zest
  • Salt and pepper to taste

Directions

Mix the olive oil, lemon juice, honey, apple cider vinegar, and lemon zest together. Slowly add the olive oil to the mixture. Add salt & pepper to taste and put dressing on the bottom of a large salad bowl.

Add the salad ingredients over the vinaigrette and mix gently. Enjoy!
