PICKLED PINK STUFFED POTATO

Ingredients

  • 4 medium baking potatoes.
  • 1 cup shredded cheddar cheese.
  • 4 bacon strips, cooked and crumbled.
  • 1/2 tomato, diced.
  • Pickled Pink Sweet Gourmet Pickles, (we like 2 or 3 per potato, but the sky’s the limit!),diced.

Directions

Bake potatoes at 400 degrees for 1 hour or until tender. Cool slightly. Cut each potato in half.  Scoop out the meat of the potato leaving a thin shell. Season the potato with salt and pepper or seasonings of your choice. Put potato back in shell and cover with cheese, crushed bacon, tomatoes and sweet pickles. For a little added heat, substitute the sweet gourmet pickles for Pickled Pink’s Sweet Heat Jalapeños!
